Toddler Tuesday: Veggie Muffins


I find it hard to believe it is already Tuesday! Although I thought for most of the day yesterday that it was Tuesday so this kind feels like a repeat haha. Now that we are in the midst of unpacking boxes, combining our things into the household I had to make up some new foods for Jack for our freezer. I've been dying to try this recipe a mommy friend of mine shared with me. (Thanks Lauren!) Its a great recipe for combining fruits AND veggies to draw in even the pickiest little eater to eat something good for them.




Toddler Veggie Muffins 
Made 36 mini muffins 
Adapted from this toddler muffin recipe

Ingredients 
1/2 cup butter, softened
1/2 cup brown sugar
2 large bananas mashed
1 (4.5 ounce) jar of butternut squash baby food
1 carrot grated
2 eggs
1 cup flour
1/2 cup oat bran
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg

Jack enjoyed helping out :) He was in my arms ready for naptime while I was just getting them into the pans. 
Make it!
Cream the butter and brown sugar together. Mix in the mashed banana, butternut squash, grated carrot and eggs. Blend together so it is well mixed. Then add in your dry ingredients all at once and gently fold it in until it comes together. Spoon into muffin papered or greased muffin tins. 
Bake at 375F for 15-20 minutes until cooked through. They freeze really well!


I loved how the muffins came together. The were just the right density and smelled lovely! I actually tried one - I had to if I was going to feed it to Jack. I was very skeptical of trying them just because of the wacky carrot and squash ingredients. But they actually tasted just like a yummy banana bread.


I would have put in a picture of here of Jack munching into them but I forgot to take one :(. He had some at dinner and despite his changable mood he ate a good portion of one which is big deal for him. As you might remember (if not check out this), Jack doesn't really enjoy trying new foods with the exception of cheese. So I found it very encouraging he ate some without fussing too much.
