Toddler Veggie Muffins
Made 36 mini muffins
Adapted from this toddler muffin recipe
1/2 cup butter, softened
1/2 cup brown sugar
2 large bananas mashed
1 (4.5 ounce) jar of butternut squash baby food
1 carrot grated
1 cup flour
1/2 cup oat bran
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg

Cream the butter and brown sugar together. Mix in the mashed banana, butternut squash, grated carrot and eggs. Blend together so it is well mixed. Then add in your dry ingredients all at once and gently fold it in until it comes together. Spoon into muffin papered or greased muffin tins.
Bake at 375F for 15-20 minutes until cooked through. They freeze really well!
I would have put in a picture of here of Jack munching into them but I forgot to take one :(. He had some at dinner and despite his changable mood he ate a good portion of one which is big deal for him. As you might remember (if not check out this), Jack doesn't really enjoy trying new foods with the exception of cheese. So I found it very encouraging he ate some without fussing too much.
