Dinner-saver and Simplicity: Pork Tenderloin Rub!

As promised, here is our favourite rub recipe! (I know that I'm fulfilling my promise a day late - but I was in a food coma last night from having a wonderful afternoon at my goodbye par-tay! Thanks all <3) Its originally intended to be used on slow-cooked ribs with a sauce, but we are diggin' this rub on pork tenderloin.  Excellent way to spruce up a $3.45 piece of meat into a five star meal. It has been a life saver for us when we have the best intentions of marinating meat but don't get around to it until 4:50pm. Bring on the rub!

Pork Tenderloin Rub
We like to make several batches in one and save a container premixed in the cupboard. Just remember the label it - we had a moment of "Uh oh is that fajita mix or rub?"

1/4 cup brown sugar
2 tbsp paprika
2 tbsp chili powder
1 tbsp ground cumin
1 tbsp salt
1 tsp pepper
1 tsp cayenne pepper
1/2 tsp cloves

Put it together!
Easy-peasy-lemon-squeezy. This one is just that - put it together in a bowl. If you're using it right away spread it all over the meat or you could put it in a bag and pop in the meat and shake. Then cook your meat as you were planning to!

We love it BBQ'd (so much so that Scotty braves all weather for it) but I'm certain it would be great baked too. One thing is for sure I'm always glad to have it made up in the cupboard along with our spices. Its a great way to spruce up cheap meat - a great budget saver!
