As our week begins, both boys are sick with a bad cold. Jack went off to Amy's for his last day with her (cut short - poor buddy just wasn't feeling great) and Scotty went into his office for the day hacking and sniffling.

It was pretty chilly out today as the snow came down. I zoomed around like a crazy person getting all of my to-do list done for the week. It is amazing how fast you can go through all your errands without a baby in toe! I was home by lunch and tackled a bunch of boxes. Lucy and I zipped out into the wind for a hike and 35 minutes later we were back inside frozen but refreshed. It feels to get out with my fav pooch again during the day for some power walks!

This little guy has been suffering with his cold for a couple days now and he is in need of some healing. Sick babies are heartbreaking but he is finally getting back his appetite so Momma will stop panicking. "Soup please! Hold the broth (unless you want it EVERYWHERE). Oh and hold everything except the pasta and peas." He was a very good sport and tried the carrots and chicken but quickly spit it out. He LOVED the pasta though and slurped it up. Hopefully the broth will bring him some peace tonight while he tries to sleep battling a cough.

Comforting Chicken Noodle Soup
Servings: a bundle so make room in your freezer!
3 carrots, peeled and chopped into bitesize pieces
2 medium onions
3 cloves garlic
2 celery stalks or 1/2 tsp celery salt if the crisper is bare
1 cup frozen peas
1/4 tsp. thyme
2 quarts chicken stock
1 pack chicken bouillon (plus 1 cup hot water)
2 chicken breasts, pre-cooked
Kosher salt to taste
2-3 cups dry pasta
1/2 cup rice
Lets make it!
Peel, chop your veggies and get them in the pot with your stock and bouillon(premixed with hot water and good to go). Let that come to a boil and then turn it down to low to simmer for 20-40 minutes. I love letting it simmer for a while because it releases delicious flavour from the vegetables and the house smells amazing. In the meantime while you are being soothed by the smell get your chicken breasts cooked. I baked mine in the oven then chopped them up. When you are 20 minutes from supper add in your pasta, rice and chopped chicken. Bring to a medium simmer and you'll be ready to eat when everything is soft.
Oh yes and it makes a bundle of left overs. Bring on that cold weather - we are ready for you!
