Mac & Cheese for all Ages: From scratch, delicious, and simple!


Whether you are a working mom or a mom at home working to manage a household, this recipe is a must make. Bi-weekly I make this recipe and freeze for Jack. I pack it in his lunch to go to his babysitters or we heat it up and serve for supper. It is a great source of calcium and you can even add cut up chicken or veggies.  Jack absolutely adores it and eagerly eats it up. I love having a recipe that makes many little meals and freeze up perfectly. It also is quick to make so you don't have to wait until your little one is asleep - they can be your assistant in the kitchen!

It comes from my FAVOURITE kid recipe book ever.  I took it out of the library in September and fell in love! The book is called The Big Book of Recipes Babies, Toddlers & Children: 365 Quick, Easy and Healthy Dishes. I have yet to buy my own copy but it is on my wish list the next time I'm into Chapters. It is really well written and is truly filled with easy and healthy recipes. It has recipes for each stage of a child's life while they are expanding their foodie horizons.

When you go to make this recipe be prepared to sample a bit yourself. It is SO tasty! Scotty and I actually have this recipe on our menu for this week for the adults to eat - its that wonderful.  When you make it for adults I would say use a strong cheese for great flavour and add some pepper. But when I make it for Jack I just use whatever cheese I've got going on in the fridge.

I love that this little meal is made from scratch so I know exactly what is going into it. We try very hard to stick to Clean Eating as much as we can. We made that choice a year ago and have really enjoyed the noticeable changes in our overall well-being. Both of us really feel it is important for Jack too to help built a healthy digestive system and give him strong building blocks for life.

Cooking from scratch is not always easy. It is difficult to cook from scratch on the fly - you need a little planning ahead and that is challenging when you are busy with life.  This book and this recipe embody all the things I love when it comes to cooking - quick, simple and healthy. This Mac & Cheese only needs 4 ingredients. But you may also like to get some non-breakable bowls to help your assistant chef(s) in the kitchen :).

Macaroni & Cheese
Adapted from "The Big Book of Recipes Babies, Toddlers & Children: 365 Quick, Easy and Healthy Dishes"
1 cup macaroni
1oz butter
2 tbsp all-purpose flour
1 cup milk
1 cup grated cheese

Set aside 25 minutes to make this meal, a pot and a large frying pan and spatula. Oh yes, and some bowls for playing!
Loves grabbing a sample on the run - don't mind the runny nose!
Cook the macaroni until soft. While the pasta is cooking melt the butter in a saucepan and add in the flour. Cook for about 2 minutes over a low heat - don't let the flour turn brown. Pour the milk in slowly while stirring with spatula. Keep stirring until you have a smooth sauce. Bring to the boil, reduce heat, and simmer until smooth and sauce thickens. Remove from the heat and stir in the grated cheese and then cooked/drained macaroni. Stir until blended.
Freezes really well individually. Makes 12 little toddler sized portions.
