Tomato Basil Parmesan Soup

This week our special meal was Tomato Basil Parmesan Soup in a slow cooker brought to you by excellent blogger Utah Mama. Check out the recipe here!

All I can say is Wow and Yum!

Scott flashed me, as he called it "His dork face with thumbs up!", to signify it definitely found a spot on our menu board!
We are making one new recipe a week to avoid getting into a food slump and so this week was this recipe.


It is made in a slow cooker (I'm loving the slow cooker, easy to make dinner during morning naptime!) and the flavor is to die for. Really delicious smelling house all day too!!


I followed the recipe exactly and only deviated with two ingredients: beef instead of chicken broth and dried oregano instead of fresh.

It turned out really well and was great with some brown bread rolls from Moxon's! Jack and I visited the critters too! Despite the dreary weather they were all very chipper and greeted us at the fence. Sadly Momma doesn't have enough hands to hold Jack, pet the creatures AND take pictures so you'll just have to imagine it.


It made enough for some frozen lunches down the road and of course day after left overs for lunch. Delicious!
